On the subject of comfort...
...the days here are beginning to hint at Autumn. Just a bit of nip in the mornings so that if we've left a few windows open to the night air I rush, shivering, to close them upon waking. And cool crisp evenings--the jewels in the crown of Fall. What could be better than an after-dinner stroll through the neighborhood in these cool evenings? Neighbors out to say hello, the kids gathering to chat, no more breaking a sweat for a few blocks walk. Just lovely.
And another lovely thing (Becca in general is lovely, truly lovely) from my friend who supplies me with luscious recipes: just the perfect thing for a chilly morning. Healthy (you can take out all of the sugar if you wish!) and simply yummy. And major comfort-food, that's for sure. Without further ado:

Baked Oatmeal a la Becca
2 c. uncooked oats
1/2 or less brown sugar
1/2 c. (approximately) chopped apples, raisins, other...
1 t. baking powder
1/2 t. cinnamon
1 1/2 c. milk
1/2 c. applesauce
3/4 t. vanilla
2 T. melted butter
1 egg, beaten
Combine the first five ingredients in a bowl (or right in the baking dish if you prefer...which I do). Add milk, applesauce, vanilla, butter and egg. Stir well. Put into 8-inch-square (or the equivalent...) pan and bake at 375F. for 20 minutes. Dish up (and smother with cream if you're feeling really decadent...or with milk if you're feeling less so....or eat plain which is still darn good and probably better for you!)
